Introduction
Located in a sleepy village just a few miles from the village of Chablis, Alice and Olivier De Moor are making a name for themselves in the broader region. Their style of winemaking is a bit of an homage to both of their heritages, with Olivier hailing from Chablis and Alice from the Jura. Both are trained enologists who have decided to take their wines in a significantly different direction than their neighbors.

The estate was founded in 1989 with a small set of parcels growing old vine sauvignon blanc, but over the years, the estate continued to add vineyards from around the region, with a focus on older vines whenever possible. The grapes are picked in small bins and moved to the winery, where everything is moved by gravity after starting in a pneumatic press. No sulfur is used during fermentation at all.
The wines ferment in a combination of neutral barrels of various sizes, some cement and amphora vessels. Generally speaking, their wines tend to be generous, showing none of the traditional “tart” or “underripe” profiles of traditional Chablis.
The wines show rich, ripe fruit and tend to have a more buttery, nutty profile.
There is a significant range of wines produced at the domaine, however highlights include their old vine “Bourgogne Aligote 1902,” which come from vines planted in 1902 and is only produced in top vintages. The Bourgogne Chitry, also a favorite, comes from vines planted on clay with Kimmeridgian marl and silex as a base soil lending a pronounced minerality and focus to the wine.
